A MENU FOR ALL TASTE SENSES


There are countless aromas. And we experience them all through our sense of smell. However, the tastes that we perceive with our tongue and palate include only sweet, sour, salty and bitter, as well as a lesser-known flavor called umami. It stands for the taste of protein, such as that found in meat, but also in aged Parmesan cheese, soy sauce or dried tomatoes. Instead of combining these five flavors as harmoniously as possible in a single dish, as is usually the case, our chef creates a menu in which a course is dedicated to each one of them, which plays to the fore. So that you can fully concentrate on them.
