At Rehbach, we attach great importance to quality, sustainability and regionality. That's why we prefer to source our food from selected suppliers. Whether fresh organic dairy products, meat from species-appropriate husbandry or seasonal vegetables - we know where our ingredients come from. Transparency is important to us, and we want you as a guest to be able to sit back and enjoy your meal with a good feeling. An overview of our partners and their origins can be found below and on site in the buffet area.
Eggs:
- All our eggs come from the farm (Fiegenschuh family) in Schattwald & are labeled with quality class 1 "free-range" - alternatively we receive free-range eggs from the Sennhof in Frastanz.
Dairy products:
- Milk & yoghurt products are 100% organic - certified by Salzburg Milch.
- Our cream, crème frâiche, curd cheese & sour cream are fresh & certified organic by Salzburg Milch.
- We obtain our cheese from Schärdinger, 'Ländle Käse, Tirol Milch and the Tyrolean company Bio vom Berg.der Schärdinger, Tirol Milch and the Tyrolean company Bio vom Berg.
- Furthermore, all oat, almond, coconut & rice drinks are certified organic by the brand "my vay".
Meat:
- All our beef products come from farm-raised highland cattle or Tyrolean grey cattle.
- Game products are sourced several times a year from local hunting grounds or from Austrian hunts.
- Lamb is sourced from the Müller family in Zöblen or alternatively from wholesalers in Imst.
- Poultry and pork always carry the AMA seal of quality and are supplied by wholesalers in Imst.
Fish:
- The fish varieties trout, rainbow trout, char and salmon trout are all sourced fresh from the Ötztal fish pond (Längenfeld) or the Lake Constance fish pond (Lindau).
- You will also find sea bream and sea bass from ASC certified farms in Croatia on our menu.
- Salmon and smoked salmon products will continue to be offered due to high demand & sourced from Norwegian farms via the wholesaler.

- Liptauer, pickled cream cheese products: "Die Käsemacher".
- All curd cheese spreads are produced in-house.

Bread:
- Breads, rolls & sweet baked goods are baked in-house. Our main supplier is the EDNA bakery store and sourdough bread is produced by our kitchen every week 😊
