The Palatinate “Saumagen” is as much a part of the Palatinate’s culinary tradition as wine and cozy wine taverns. Behind the name lies a hearty specialty made of potatoes, pork, and spices, traditionally cooked inside a pig’s stomach.
Saumagen gets its distinctive character from a balanced blend of coarsely diced meat, potatoes, and aromatic spices. It’s traditionally sliced and pan-fried—slightly crispy on the outside, hearty and juicy on the inside.
Originally a simple, filling dish of Palatinate cuisine, Saumagen is now known far beyond the region. It’s best enjoyed in the traditional way with sauerkraut and a glass of Palatinate wine.
Every Thursday, you can try Palatinate Saumagen at our Genussmarkt during lunch from 12:00 p.m. to 3:00 p.m.
