We prepare a true Tyrolean classic - a dish that can be found on the menus of many inns and mountain huts: Schlutzkrapfen
This traditional specialty is deeply rooted in Tyrolean food culture and reflects both the natural conditions and the cultural influences of the region.
We start the course by looking at the history and development of Tyrolean food culture. We will look at how Alpine cuisine has been shaped over the centuries and which regional ingredients and traditions have shaped it.
We will then delve into the origins and development of Schlutzkrapfen before kneading dough together, preparing the filling and learning the perfect technique for rolling, shaping and filling.
We will prepare a spring salad to accompany the doughnuts. It is refined with nutrient-rich microgreens from Tirol Kresse - a regional company that is dedicated to the sustainable, year-round cultivation of so-called sprouts and was awarded the Tyrolean Food Innovation Prize in 2024.
At the end, we enjoy our homemade "Schlutzer" over lunch together in a pleasant atmosphere.
