Chef Simone, when did your passion for cooking start?
"My passion for cooking was born when I was only five years old. I still remember the days spent watching my grandmother preparing fresh pasta with extraordinary care and dedication. That simple daily act turned into a real spark that ignited my love for cooking."
How did you come to Miramonti Park Hotel?
"My journey at Miramonti began at the perfect time in my professional growth. It was a combination of destiny and human relationships: thanks to mutual friendships with the Da Zanche family, I had the opportunity to become part of this wonderful reality. Here I found not only a kitchen in which to express my philosophy, but also a close-knit brigade with which to share my passion for the culinary art every day."
What is your philosophy in the kitchen?
"For me, cooking means simplicity, respect for raw materials and collaboration. Every dish comes from the desire to enhance the ingredients in the most authentic way possible, without distorting their essence. I strongly believe in teamwork: my brigade is the beating heart of Miramonti's kitchen, and together we transform each service into an experience of taste and sharing."
Is there a dish that best represents Miramonti restaurant?
"Without a doubt, the egg cooked at low temperature or fried with local cheese fondue and seasonal truffle. It is a dish that perfectly embodies my philosophy: the simplicity of an egg that, thanks to its creaminess and the combination with a fine ingredient such as truffles, becomes something extraordinary."
What dish would you recommend for an unforgettable dining experience?
"If you want to try something really special, I recommend the rabbit saltimbocca, one of my favorite creations. It is a dish that tells of my passion for balancing flavors and textures, combining delicacy and intensity in a perfect marriage."
Are you ready to fulfill every request of your guests?"
"Absolutely! Our kitchen is always attentive to the needs of every guest, because we believe that food should be a pleasure accessible to everyone. I still remember when, upon request, we prepared a pizzocchero with tomato - something unusual for the tradition, but which made one of our customers happy. This is our mission: to make every guest feel special."
