Grisons maluns with apple sauce
Graubünden cuisine is characterized above all by nutritious dishes with simple ingredients that are "gluschtig fein". Today "ds Nani" has chosen something for the sweet tooth: Maluns.
Maluns is a traditional Grisons peasant dish and first appeared on the table in 1758 at Marschlins Castle. Maluns are prepared from boiled potatoes, which are grated and roasted together with flour in butter. If you look a little deeper into the cooking pot, you will find that the composition of this dish (as with others) often reflects the hard physical labor of the peasantry.
Ingredients for about 4 people:
320 g potatoes, firm boiled
80 g white flour
60 g butter
2 cooking apples
cinnamon and sugar
Preparation:
Grate al dente cooked, peeled potatoes twice, preferably in the machine. Add the white flour, mix and immediately toast in the warm butter. Use a spatula to keep the maluns loose. Prepare an applesauce with the apples, sugar and cinnamon and serve with the maluns.
It goes perfectly with a slice of ripe Bündner mountain cheese and a glass of red wine from the Bündner Herrschaft.
