Gailtaler Almkäse PDO - tradition meets indulgence
Gailtaler Almkäse PDO is a traditional cheese specialty from Carinthia, which is produced exclusively during the summer months on 13 alpine pastures in the Gailtal valley. The basis is fresh raw milk from cows that graze on the herb-rich alpine meadows in the Carnic and Gailtal Alps. This special feed gives the milk its characteristic taste, which is later reflected in Gailtal Valley cheese. Production begins with milking the cows. The raw milk is heated in a copper kettle and natural rennet is added. After the curd is cut and heated, it is scooped into cloths and pressed into molds. After 24 hours in a salt bath, the cheese matures for weeks in the cheese cellar, developing its spicy, full-bodied aroma. However, the Gailtaler Almkäse experience does not end at the production stage. Visitors can taste the freshly matured cheese at the Tröpolacher Alm, often accompanied by homemade butter, farmhouse bread and other regional, farmhouse specialties.
